Black Pudding is a cooked product containing a mixture of blood, pork fat, pork rinds, cereal, onion, spices & herbs. The ingredients are filled into a cylindrical food-safe plastic casing secured with metal clips and cooked to pasteurise the product, followed by rapid cooling.
