Here’s a quick and easy vegetable casserole recipe to try:

Ingredients:

• 500g potatoes, peeled and diced
• 250g carrots, sliced
• 1 onion, chopped
• 2 leeks, sliced
• 250g mushrooms, quartered
• 1 swede, peeled and diced
• 500ml vegetable stock
• 1 tablespoon olive oil
• Salt and pepper to taste
• Optional: 200g diced beef or chicken for added protein
• Optional: grated cheese for topping

Instructions:

1. Preheat your oven to 180°C (350°F).
2. Heat the olive oil in a large skillet and sauté the onions and leeks until softened.
3. Add the carrots, mushrooms, potatoes, and swede, cooking for 5 minutes to combine flavours.
