How to make homemade vegetable soup: the non-vegan way
Ingredients
- 200g chopped vegetables – onions, celery and carrots are a good place to start off
- 300g potatoes, cubed
- 1 tablespoon oil, your choice
- 700ml stock, either vegetable or chicken works great
- Crème fraîche and fresh herbs to serve
Method
STEP 1
Fry your vegetables and potatoes in a pan with the oil for several minutes until they begin to soften.
STEP 2
Cover with the stock and simmer for ten to 15 minutes until the veg is tender. Blend until smooth, then season. Serve with some crème fraîche and fresh herbs. You can freeze your soup and save it for up to one month.

How to make homemade vegetable soup: the vegan way
Ingredients
- 1 tablespoon olive oil
- 1 finely diced onion
- 1 thinly sliced leek
- 3 carrots sliced, no need to peel!
- 2 sticks of celery, sliced
- 1 small parsnip, peeled and sliced
- 1 medium potato, peeled and chopped into cubes
- 500ml vegetable stock
- Salt and pepper to taste
Method
STEP 1
Put the olive oil, onion and leek in a wide, deep saucepan. Cook on a low heat, with the lid on, for five minutes until softened. Stir occasionally.
STEP 2
Add the chopped and sliced carrot, celery, parsnip and potato, and stir.
STEP 3
Add your stock and some salt and pepper to taste. Bring to a boil and then simmer on a low heat with the lid on for 15 minutes, or until all the vegetables are completely soft.
STEP 4
Use a hand blender to turn the soup into a smooth puree and then add a little boiling water if the soup is too thick. Add some more salt and pepper if needed.
STEP 5
Serve into bowls. Enjoy with some crusty soda bread and chilled white wine for a fancy accompaniment.
